Gingered Smoked Fish Salad (Serves
4)
455g (1lb) smoked cod fillets, fresh or
defrosted, skinned and cubed
1.25-2.5cm (approx. 1”) root ginger, peeled and finely
grated
7 x 10ml spoon (7 dessertspoons) reduced calorie
mayonnaise
2 x 15ml spoon (2 tablespoons) double cream
115g (4oz) whole green beans, cooked and chopped
55g (2oz) sweetcorn
1 large tomato, diced
bunch watercress, rinsed
fresh chopped chives, to garnish
Poach the cubed fish in 300ml (10fl oz)
water for 7-10 minutes, drain, cool and chill.
In a large bowl add the ginger,
mayonnaise and cream.
Stir in the beans, sweetcorn, tomato
and fish. Arrange on a bed of watercress, sprinkle over
chives and serve as a starter.

Cod Cocktail (Serves 4)
340g (12oz) cod fillets, fresh or
defrosted, skinned and cubed
5 x 15ml spoon (5 tablespoons) mayonnaise
1 x 15ml spoon (1 tablespoon) tomato puree
1 x 15ml spoon (1 tablespoon) sherry
0.5 x 5ml spoon (half a teaspoon) sugar
dash Worcestershire sauce
dash lime juice
salt and black pepper
115g (4oz) mixed lettuce leaves
paprika, to garnish
Microwave Power: 800 Watt
Poach the fish in 300ml (10 fl oz)
water for 5-6 minutes or place in a suitable dish with 1-2
x 15ml spoon (1-2 tablespoons) water, cover and cook on
HIGH for 2-3 minutes. Drain the fish and allow to cool.
Chill in a refrigerator until required.
Mix together the mayonnaise, tomato
puree, sherry, sugar, Worcestershire sauce and lime juice,
season with salt and black pepper.
Line individual dishes with the
lettuce; add the fish and spoon over the cocktail sauce.
Garnish with paprika.
Serve with bread as a starter.
